Olives

Our densely canopied olive grove spans several acres and contains black olive varieties.

Unfortunately, you can’t eat an olive right off the tree. The raw fruit contains oleuropein, a bitter compound that must be removed prior to eating.

In order to do this, olives should be cured by steeping in oil or a salt brine (most common.)

Our olives are very high up and are labor-intensive to harvest.[
